I had a call from Varry who is a spokesperson on behalf of the ‘technical’ department at Graham’s ‘family’ dairies.
They receive the pasteurised milk from the dairy parlour which is then completely and fully skimmed. Further down the process the milk is mixed with the fat but the digital fat mixer is strictly set to 5% fat, so that every single bottle is standardised. A legal requirement. Legally they are not allowed to sell milk that is either below or above this % fat content.
Raw Jersey milk from Dreamer’s Farm typically varies between 4.3% – 8 % fat depending on the season or diet of the cow. (So this would explain our extra creamy summer milk) but Graham’s dairies ensure their milk never hits above 5% fat content all year round.
An interesting fact indeed.
